is there a way to adjust the sensitivity of the tempo button (aka “rate”) fader ?
I think it’s too fast (or too slow when used in combination with “seq” key), and quite difficult to adjust .

No this cannot be adjusted I’m afraid.

yes, and it feel a little too bit responsive. It’s very difficult to make a slow tempo decelerandi from 120 to 100 for example : done with a very short movement, and you have to watch precisely the screen.
TAP tempo is a difficult option when performing, and using the comb SEQ button/potentiometer keeps two hands 
Am I the only one reclaimer ? If not, maybe you should think about the possibility to set by ourselves the sensivity/speed of that potienmeter in a future firmware update ?
