Newby Question - Can 2 MIDI controllers be used at the same time to control different VSTs?
If so, how would I set them up to do that?

Yes. They would each need to be on different MIDI channels of the 16 available. Then the plugins would need to be set to corresponding channels.

How you do that depends entirely on which DAW (The program used to host your VSTs) you’re using.
In Cakewalk, you simply create a (SIT) Simple Instrument Track for each VSTi. The set the input of the first (SIT) to your first MIDI controller and set the input of the second (SIT) to your second MIDI controller. Of course, make sure input echo is on. Also, set the MIDI channel of your SIT’s MIDI track to MIDI Channel 1 as most of Arturia’s MIDI mappings default to MIDI Channel 1 and you cannot set them to Omni (I wish one could).
Of course, the instructions for your DAW will be different. You need to specify your DAW so users with that DAW can chime in with their instructions.
