Problem description: When I press the sustain pedal, Pigments (and other software instruments) doesn’t hold the notes (with envelope Sustain at 100%). So I have to hold a key while tweaking the sound with two hands (during performance).

How is that different from the way the sustain pedal (midi CC#064) work now?
If you mean to turn the Sustain level up while the note/s is held, then you for example can assign the expression pedal (midi CC#011) to turn the level up and use the Sustain pedal to hold the note/s.

Yeah, I was just investigating by using Pigments Standalone and its behaviour is fine (holding notes with Sustain Pedal).
For some reason, it’s when I’m in Analog Lab that when it receives the Sustain Pedal CC (MIDI CC#64=0,127), it doesn’t respond to it. I confirmed that my controller is sending these properly. So I couldn’t find a way to make AL respond to CC#64 for any software instrument (after checking that Sustain Destination is not at None).

I have no issues like this in Analog Lab.
Keep in mind, that a piano envelope like sound will fade out when you use Sustain pedal, as it has no sustain level. The note/s will be held until the Decay phase is over.
Can you name a factory preset where you have this issue to test?
Is your Analog Lab fully updates?
I restarted Analog Lab and the problem went away.
I think there’s possibly an issue that arises when hot-plugging MIDI devices and not restarting AL? I use Minilab3 and a generic controller and sometimes have one or both connected. So it’s probably better to restart AL when changing the physical controller config.
