More than 3 years later and still no permanent solution except to buy another pedal of the "right" polarity (or use soldering...)

I ask again Arturia please tackle the problem.

Problem was solved with the help of José from Arturia Support.

After having saved a configuration with the steps described here:
https://www.arturia.com/faq/utilization/my-sustain-pedal-acts-reversely-how-to-invert-it
(Other parameter configurations can be saved in this way)
one needs to use the recall function which works as follows:
After booting up the Keylab, press "Edit" then "Recall" then choose the right number with the value rotary knob then press on the knob. Voilà.

I don't understand why there was no follow-up here by an Arturia staff member. This would have saved lots of agggravation & frustration.

Anyway problem is now solved.

I'm assuming you're using the more modern KL88 MkII, which doesn't have an edit button, hence why you can't find it.
However the firmware should automatically detect the polarity of the sustain pedal when you switch the keyboard on (assuming you don't switch it on with your foot on the pedal, otherwise it's gonna work inverse).
