How can I setup Analog Lab to transpose incoming MIDI notes up or down a few octaves?

FYI: You have posted in the controller section. Analog Laboratory was also an old software. Analog Lab is'nt the same. Analog Lab has it own forum further down the page.

You can transpose each part in Analog Labs multies. Please consult the manual section "3.7.5. The MIDI Settings Button".

In other cases you have to change range in the full applications, if you have them, and you use Analog Lab as standalone application.

If you use Anaog Lab in a DAW or other host, then you can midi transpose in those applications.

Also i assume your midi controller can transpose.
