Hi

Is it possible to have a hold/latch mode on the keyboard? Kind of sostenuto?

Hi and welcome to Arturia forums.

I'm not sure what you are looking for. It's possible to have controls including pedals to use all MIDI CCs. A Sustenuto pedal is a on/ off kind of thing. But an application need to support Sustenuto, to make it work like it. It's not enough the keyboard can do it.
Arturias Piano V2 does have a Sustenuto pedal function.

I think all Arturias have at least one Hold function of some kind. They work, if they are set to work.
Most applications have a Hold function. But i think it's mainly Piano applications that have a Sustenuto function and not all of them have. That depend on the application.

I think your question is more about what each application can do, than about the controller.
