Title: Is there a way to (step-)edit velocity data?

I was wondering if there is a way too see and edit the velocity data in a sequence when in step-record/edit mode.

No, as far as I know there is no direct way to edit the velocity data. The easiest workaround is to record the step again in step edit mode, select the step with the rate knob.
