This has occurred in every pattern I've worked on so far!
I record some notes into a track, say for the Snare. I record more tracks, then return to the Snare track to edit it. I then can't delete notes or add new ones. The step buttons light up for added notes, and go out for deleted notes, but the sound doesn't change. If I work on a different track, the lit notes revert to the original recording. It's like the track has locked itself.
So far I've worked around it by muting that track and devoting another track to the Snare. Which means losing a track, and it's untidy when I review the pattern visually.

On which iPad do you encounter this issue ?
does it happens with specific Kits/projects ?
Have you tried to reinstall iSpark to see if it fixes your issue ?

Hi. It's an iPad Air. I've not tried reinstalling iSpark. Will I be able to do this without losing my data?

You can export your projects first:
https://www.arturia.com/faq/utilization/import-export-projects
Once everything is saved, you can uninstall safely.
