Hi,
  I tried the Demo which sounds great, but it doesn't seem to respond to velocity as I would expect (ie. louder with harder playing) Am I missing something?

Hi dave,
the velocity can be assigned to lots of parameters through modulation matrix in the top panel.

It'll depend on the patch. Some presets may respond to various performance parameters (mod wheel, velocity, aftertouch) and others don't, depending on what's set in the Mod Matrix by the Patch Designer, like Kevin mentioned.
